ITS HISTORY

In the eastern part of Sicily, in the late-baroque city of Modica, the rite of the preparation of chocolate cooked at low temperature with “bitter cocoa paste ” hands down from generation to generation.

The Spanish brought in Modica the “xocolati”, a product which the Aztecs extracted from the cocoa beans crushed on a stone called “metate”, in order to obtain a granular dough. The “Modicani” learnt this process of working from the Spanish .Today the chocolate-making uses modern saucepans, but has preserved the traditional pans which are commissioned to the fewest tinsmiths left.

 

THE CHOCOLATE-MAKING

Still made without added fats or emulsifiers in the cold working, the cocoa paste is not subjected to the tempering processes typically used to make other chocolate. Today the mixture is prepared in a double boiler with the addition of refined sugar, that doesn’t melt.

The sugar crystals are thus preserved- the unique secret of the Modican recipe.
The chocolate bar comes in characteristic uneven rectangular brown bars with three grooves across the top.
It can be tasted in bars or melted in water as hot drink.

Vanilla chocolate
Ingredients: Bitter cocoa paste( min.50%), sugar, vanilla.

Hot pepper chocolate
Ingredients: Bitter cocoa paste( min.50%), sugar, hot pepper.

Hazelnut grains chocolate
Ingredients: Bitter cocoa paste( min.50%), sugar, hazelnut grains, aromas.

Almond grains chocolate
Ingredients: Bitter cocoa paste( min.50%), sugar, almond grains, aromas.

Pistachio grains chocolate
Ingredients: Bitter cocoa paste( min.50%), sugar, pistachio grains, aromas.

Coffee chocolate
Ingredients: Bitter cocoa paste( min.50%), sugar, coffee, aromas.

Carob chocolate
Ingredients: Bitter cocoa paste( min.50%), sugar, carob flour.

Lemon chocolate
Ingredients: Bitter cocoa paste( min.50%), sugar, lemon rind, aromas.

Orange chocolate
Ingredients: Bitter cocoa paste( min.50%), sugar, orange aroma.

Citrus fruits chocolate
Ingredients: Bitter cocoa paste( min.50%), sugar, orange, lemon and mandarin aromas.

Mint chocolate
Ingredients: Bitter cocoa paste( min.50%), sugar, mint aroma.

Jasmine chocolate
Ingredients: Bitter cocoa paste( min.50%), sugar, jasmine.

Salt chocolate
Ingredients: Bitter cocoa paste( min.50%), sugar, salt.

Pure chocolate
