The italian company “CioKarrua s.r.l.” is based in Modica, in the province of Ragusa (south-east of Sicily). The “Iblea” area is appreciated as an optimal area in the growing of carob tree and thanks to of this it is considered the kingdom of carob.

Estabilished by Giorgio Cicero “CioKarrua s.r.l.”, avails itself of the experience of coworkers which are a great success in the processing of carob and in the craftmade production of sweets. The main target of the firm is to make the mediterranean typical products known all over the world. These sweets have become rarities and “CioKarrua s.r.l.” is striving to preserve and promote them as part of its efforts to prevent the increasing standardisation of flavours caused by industrial food production.

 
     

“CioKarrua” company is committed to process carob, a fruit with excellent qualitative and nutritive components, in order to obtain the following by-products:

  • meal of carob pulp- carob powder
  • meal of carob seeds (locust bean gum)
  • syrup of carob pulp

to obtain these it is necessary to mill and then divide the pulp from the seeds.
The whole carobs are poured into a hopper and through a bucket elevator, they are lifted up to a disintegrator.
The disintegrator has an internal wheel provided with knives and it quickly turns. thanks to this movement all the seeds jump out to the siliques and the pulp is completely crumbled. the shattered carobs fall into a swinging sieve and the bigger pieces slide into a special pipeline that carries them into a container, where they are gathered.

Now the stoned pulp are used to obtain the meal and also the syrup. The seeds after another process are used to produce the so called “locust bean gum”- meal of carob seeds.
Then these carob by-products can be used to make delicious cookies and sweets.

 

Meal of carob pulp is used in several fields:

  • pastry field to obtain sweets, jams and other aromas
  • food field to prepare fresh pasta
  • medical field for its balsamic properties and like intestinal regulator.

Meal of carob seeds is used like thickener:

  • to produce cheeses and creams
  • in food packaging industry

Carob syrup is used:

  • in ice-cream field
  • in pastry field
  • to obtain non-alcoholic and alcoholic drinks (liqueurs)
  • in cosmetics
  • to produce candies-bonbons
